Very Tender Pork Chops with Rice and Vegetables

I used 3 pork chops for 2 people, 1 egg, broccoli, carrots, 2 tbsp. corn starch,
cooked  white rice.

I used Amoy brand Plum Sauce.

You can add a little soy sauce if you like to cut the sweetness..

In Quincy you can find it at the Kam Man Asian Market or most Asian supermarkets.

If you haven't got this sauce you can use another that you like.

1.Cut away the fat on the pork chops, use a tenderizing mallet on both sides of the pork chops.

2. In a plate add 1 egg and break the yolk and mix it together with the white.  Coat the pork chops then rub in the 2 tbsp. corn starch on both sides of the pork chops.

2.In a frying pan add olive oil, sear the the pork chops on both sides.
Then remove the pork chops and add 3 tbsp of sauce and 2 tbsp of water and mix it together in the pan. Add the pork chops and cook on a low heat.

3. Boil chopped carrots for 10 minutes. Then add broccoli for 2-3 minutes.
Remove from the water and add salt and pepper to taste.

4.Use a small bowl as a mold and lighty pack it with rice.

Turn it upside down onto the plate.

5. Put cooked pork chops and vegetable in plate.

These pork chops are very soft and can be cut with the side of a fork or you can eat them with chop sticks.
